Appearance

Whole, sound green beans; uniform size; free from foreign matter, primary and secondary defects; bluish-green (washed) to greenish-brown (natural).

Colour

Bluish-green to green (washed lots); yellowish-green to brown (natural lots); bright and even within lot.

Odour

Clean, complex; floral and sweet (washed) or fruity and winey (natural); free from musty, fermented or foreign odours.

Cup Profile

Medium to bright acidity; medium body; stone fruit, citrus, cocoa, spice; remarkably smooth and clean finish; complex with a lingering sweetness — unique to Timorese highland terroir.

Each lot is fully traceable from the cooperative of origin through harvesting, processing, export and delivery. Process (washed or natural) is clearly identified on all accompanying documentation. Lot identity, cooperative of origin, harvest region and crop year are recorded on every bag and on the accompanying phytosanitary and ICO certificate documentation.
